  • 1 Honeycrisp apple, cored and thinly sliced
  • 1 wedge of Brie cheese, sliced
  • Salt and pepper, to taste

Glaze

  • 2 tablespoons maple syrup
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon dried thyme
  • 1 garlic clove, minced
  • Splash of olive oil (for searing)

Instructions

  1. Make the glaze: In a small bowl, whisk together the maple syrup, Dijon mustard, dried thyme, and minced garlic until well combined. Set this glaze aside for use later.
  2. Prepare the chicken breasts: Preheat your oven to 400°F (200°C). On a cutting board, lay each chicken breast flat and carefully cut a slit into the side about ¾ of the way through to create a pocket. Season both sides of the chicken with salt and pepper.
  3. Sear the chicken: Heat a large cast iron skillet over medium-high heat and add a splash of olive oil. Once the oil is hot, place the chicken breasts in the pan and sear for 2-3 minutes on each side, until they develop a golden crust. Remove the chicken from the skillet.
  4. Stuff the chicken: Carefully open the slit in each chicken breast and stuff with sliced apples and Brie cheese. If desired, secure the opening with toothpicks to prevent the filling from spilling out during cooking.
  5. Glaze and bake: Return the stuffed chicken breasts to the cast iron skillet. Brush each breast generously with the prepared maple Dijon glaze. Place the skillet in the preheated oven and bake for 20-22 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through.
  6. Serve: Remove the skillet from the oven and serve the stuffed chicken breasts immediately, savoring the combination of sweet apple, creamy brie, and savory glazed chicken.

Notes

  • Using a cast iron skillet is recommended for even heat and searing but a heavy oven-safe pan can be used as an alternative.
  • If you prefer, substitute Honeycrisp with another firm, slightly sweet apple variety such as Gala or Fuji.
