Instructions
- Preparation: Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper to prevent sticking.
- Make the Apple Mixture: In a small bowl, combine 1/3 cup light brown sugar and 1 teaspoon ground cinnamon. Toss the peeled, cored, and diced apples in this mixture until evenly coated. Set aside.
- Cream the Butter and Sugar: In a large mixing bowl, beat together 2/3 cup white sugar and 1/2 cup softened unsalted butter until the mixture becomes light and fluffy, which usually takes about 3-4 minutes with an electric mixer.
- Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring the first egg is fully incorporated before adding the second. Stir in 1 1/2 teaspoons of vanilla extract for flavor.
- Combine Dry Ingredients: Sift together 1 1/2 cups all-purpose flour and 1 3/4 teaspoons baking powder to ensure even distribution. Gradually add this dry mixture to the wet ingredients in batches, alternating with 1/2 cup milk, mixing gently until just combined to avoid overmixing.
- Layer the Batter and Apples: Pour half of the prepared batter into the loaf pan and smooth the surface. Add half of the cinnamon-sugar-coated apples on top, pressing gently. Repeat layering with the remaining batter and apples. Swirl gently with a knife to create a marbled cinnamon ribbon effect.
