- Season the Potatoes: In a large mixing bowl, combine the sweet potato wedges with olive oil and all the seasonings—dried oregano, garlic powder, paprika, sea salt, and black pepper. Toss everything well to evenly coat each wedge with the oil and spices.
- Arrange in Air Fryer: Place the coated sweet potato wedges in a single layer inside the air fryer basket, making sure to leave space between each wedge for proper air circulation. To avoid overcrowding, cook them in batches if necessary; the recipe typically requires about three batches.
