Description
These 4 Ingredient Blueberry Yogurt Popsicles are a healthy and refreshing frozen treat made with fresh or frozen blueberries, honey, creamy vanilla yogurt, and a splash of milk. Easy to make and perfect for hot days, they combine the natural sweetness of blueberries and honey with the smooth texture of yogurt, creating a deliciously swirled popsicle that’s both nutritious and satisfying.
Ingredients
Scale
Blueberry Mixture
- 1 ½ cups fresh or frozen blueberries
- 1 ½ tablespoons honey
Yogurt Base
- 2 ½ cups vanilla yogurt (Greek or regular), whole milk or 2% fat
- 3–4 tablespoons milk
Instructions
- Simmer Blueberries and Honey: In a small saucepan over medium heat, combine the blueberries and honey. Simmer for several minutes until the blueberries begin to burst and release their juices. Gently mash the berries with a fork, leaving some whole for texture. Remove from heat and allow to cool completely.
- Prepare Yogurt Mixture: In a bowl, whisk together the vanilla yogurt and milk. Add just enough milk to thin the yogurt to a pourable consistency, making it easier to mix with the blueberry mixture.
- Combine Mixtures: Carefully fold the cooled blueberry mixture into the yogurt blend. Stir gently to create a swirled effect—overmixing will blend the colors into purple instead of maintaining the pretty swirl.
- Fill Molds and Freeze: Spoon the mixture into popsicle molds, insert popsicle sticks, cover, and place in the freezer. Freeze for at least 3-4 hours or overnight until fully solid.
- Unmold and Serve: To remove the popsicles, run the molds under warm water for 20-30 seconds and then gently pull out the popsicles. Enjoy immediately or store in the freezer for later.
Notes
- Use Greek yogurt for a thicker, creamier texture, or regular yogurt for a lighter result.
- Adjust honey quantity according to the sweetness of your blueberries or personal preference.
- For extra flavor, consider adding a splash of lemon juice to the blueberry mixture before cooling.
- Ensure the blueberry mixture is completely cooled before combining with yogurt to prevent melting.
- Popsicles can be stored in an airtight container or wrapped individually in plastic wrap for up to 1 week.
