Instructions

  1. Heat milk and butter: In a small saucepan, melt the butter with the milk over low heat until the mixture reaches 100-110°F, warm enough to activate the yeast but not hot enough to kill it.
  2. Activate yeast: In a large mixing bowl suitable for a stand mixer, combine the active dry yeast and honey. Carefully pour the warm milk and butter mixture into the bowl. Stir together and let sit for 5-10 minutes until the mixture is foamy, indicating the yeast is active.
  3. Add egg and salt: Attach the paddle to your stand mixer. Add the egg and salt into the yeast mixture and mix to combine.
  4. Incorporate flour: Switch to the dough hook attachment. Gradually add flour, one cup at a time, mixing until the dough pulls away from the sides of the bowl and clings to the dough hook. The dough should be sticky but workable. You will likely use about 3 ½ cups, but up to 4 ½ cups may be needed depending on humidity and flour type.
  5. Shape rolls: Divide the dough into 12 equal portions. Roll each into a smooth ball and place them close together in a greased 9×13 inch baking dish or on a cookie sheet. Cover with a kitchen towel and let rise in a warm spot for 10-25 minutes until slightly puffed.
