Dough Ingredients
- 5 tbsp butter
- 1 cup whole milk
- 2 envelopes active dry yeast (about 4 1/2 tsp)
- ⅓ cup honey
- 1 tsp salt
- 1 large egg
- 3 ½ – 4 ½ cups all-purpose flour
For Brushing
- 4 tbsp melted butter, divided
- 1 tbsp honey
Instructions
- Heat milk and butter: In a small saucepan, melt the butter with the milk over low heat until the mixture reaches 100-110°F, warm enough to activate the yeast but not hot enough to kill it.
- Activate yeast: In a large mixing bowl suitable for a stand mixer, combine the active dry yeast and honey. Carefully pour the warm milk and butter mixture into the bowl. Stir together and let sit for 5-10 minutes until the mixture is foamy, indicating the yeast is active.
- Add egg and salt: Attach the paddle to your stand mixer. Add the egg and salt into the yeast mixture and mix to combine.
- Incorporate flour: Switch to the dough hook attachment. Gradually add flour, one cup at a time, mixing until the dough pulls away from the sides of the bowl and clings to the dough hook. The dough should be sticky but workable. You will likely use about 3 ½ cups, but up to 4 ½ cups may be needed depending on humidity and flour type.
- Shape rolls: Divide the dough into 12 equal portions. Roll each into a smooth ball and place them close together in a greased 9×13 inch baking dish or on a cookie sheet. Cover with a kitchen towel and let rise in a warm spot for 10-25 minutes until slightly puffed.
- Prepare oven and brush rolls: Preheat the oven to 375°F. Melt 2 tablespoons of butter and brush it generously over the tops of the risen rolls for a buttery crust.
- Bake the rolls: Bake the rolls in the preheated oven for 10-12 minutes until the tops are lightly golden brown.
- Glaze and serve: While the rolls bake, melt the remaining 2 tablespoons of butter with 1 tablespoon honey. As soon as the rolls come out of the oven, brush them with the honey butter glaze. Serve warm for best results.
Notes
- The dough will be sticky; avoid adding too much flour to keep rolls soft and fluffy.
- Use a thermometer to ensure the milk mixture is warm but not hot, which is key for yeast activation.
- Letting the dough rise for a full 25 minutes will yield fluffier rolls, but 10 minutes works if you’re short on time.
- You can substitute whole milk with 2% milk, but whole milk improves the richness.
- These rolls are best served fresh but can be stored in an airtight container for 2 days or frozen for up to 1 month.
